Are there any culinary schools that do not require you to work with meat?
Particularly in California. I desperately want to attend culinary school, but I’m afraid the only way I can avoid working with meat is to work in the baking program exclusively, which I really don’t want.

I have one box of firm tofu, one box of extra firm. How can i use them? Can I sub them for the oil called for in baking recipes?
Tofu is a solid; oil is a liquid. Tofu isn’t a fat or shortening ….. so, no. I like to slice extra-firm into 4 thick slices; rub with olive oil; sprinkle with salt, pepper, oregano & rosemary and BBQ on all sides until golden. Would tofu work well as a replacement for eggs in a vegan chocolate pie?

Egg beaters are made from eggs, and therefore not vegan.
you can use tofu.. but make SURE it’s the Silken type. or it will not go very well.. or you can use Flax seed and water or banannas if you wish.. OR there are vegan cakes.. i call them Wacky cakes that don’t use eggs at all and turn out GREAT!! here is a link to some:
