Help with describing the taste, smell, texture, and mouthfeel of breads?
So, I’m in culinary school (focus on baking and pastry), and I can obviously tell when there’s something wrong with a bread we make. My problem is that we have to do a written evaluation of each product that is to include the aroma, taste, texture, and mouth-feel, and when everything goes right, all I can think of is “smells good, tastes good, chewy, etc.” I suck at writing, and I suck at describing those kinds of things in words… can some of you think of some words you would use when describing those elements of different types of breads? I just need a few descriptive words in my vocabulary so that I can more accurately describe the products I make!!!
Thanks
Lemony, radishy tang. ( for that very fresh type of sourdough)
Hearthy brown cedar wood sharpness ( for a fresh brown multigrain taste)
Freshly washed damp brown blanket ( fresh wholemeal loaf)
Smooth bubbles in cloud of cream ( fresh white bread)
Smells: liquor ( it IS fermented yeast), lemon sharp, sour and fresh, fizzy and deep mulled wine, sunbaked apple, rich waves of champagne, perfume of human skin.
Feels: spongey, chewy, crackling crust yeilding to stretchy middle,
glutinous and unctuous, bottom of the mouth mouthwatering, crumbly, densely packed bubbles of yeasty pockets, waxy and crispy crust, shards of flakey crust, yellowy and elastic sourness, soft, pillows of new towelling socks beneath your feet, unimprssioned white bread, princess-like whiteness and pure texture of blancmange.

Starting a baking biz in a coffee shop, what would you like to see to buy?
Hello all! I am a baker! A close friend of mine who owns a coffee shop asked me to bake for her. I need to take some classes and get everything in order. But my question is what other things should I bake besides biscotti, muffins and scones? What about quiche? What do you stop for in the morning?
You need something savory to balance out the sweets. And a hot dish like quiche sounds great. I used to live in a place where breakfast pizza was very popular. (Scrambled egg, cheese, sausage/ham, etc…)
I’m not a sweets person, so when I go in a coffee shop for a cup of coffee or an iced tea, I’d like something other than to have to settle for a bagel.

I am looking for lots of different fundraising ideas. Basically, this year I’ve decided to use my holidays from education to do some charity fundraising. I have made a list of places I could do these things .. I don’t mean like sponsered silences sort of thing, I mean the kind of thing the whole community can get involved in. Bake sales, fun days, stuff like that.
I was thinking it could be done at the loch, the community halls, the schools, the country park, the leisure centres.
So I’m looking for ideas for events that I can set up to raise lots of money for different charities, basically to get a better name for all teenagers out there, to show we’re not all criminals and some of us want to help. I am hoping to get council help, like funding, so that shouldn’t be a problem.
You need to be working with the community centres and community groups first of all. They will have tried various methods and know what works in their community and will also know what they want funding for. You are highly unlikely to get funding for fundraising.
