I enjyed ‘chapati’ with Kerali fiends ii Saudi Arabia- small pan baked flat bread. Recipe and insructions pls.
Terribly embarrassed about the typo – FRIENDS not, oh dear, fiends
Although you can find more precise instructions doing a Google search on the web for ” Chapatis ” or “Roti”, here are some basics……..
I am assuming you meant Keralite, or Indian friends and Chapati made fom whole wheat flour. If you live in North America, you can purchase whole wheat flour from Walmart, Kroger’s etc. Then mix some water ( salt/veg. oil for softness optional) to a portion of flour and knead it so as to make a tight dough ( not too wet, something you can roll into a firm ball with your hands without sticking ).
Take a Rolling pin and flat out some dough like a wheat tortilla and toss it onto the pan for roasting. Keep it turning occassionally to prevent burning. No extra grease required. Done right, it’ll fluff-up. Even otherwise, it is a wholesome, full of complex carbohydrates, healthy, lean, filling food eaten with prepared vegetables, meat or you can just wrap it around anything you want. You can even top it off with butter for taste. As a product, whole wheat tortillas come closest to a “Chapati”.
—I dont know why people call it a “Bread” , coz its not leavened, i.e fermented with yeast.
